Vacuum-Sealable vs. Ordinary Airtight Containers
"Airtight" sounds like the end of the story — but an airtight seal only stops new air from getting in. It does nothing about the air already trapped inside with your food. That is the difference a vacuum-sealable container makes.
The key difference
An ordinary airtight container closes a lid over the air that is already in the box. A vacuum-sealable container goes one step further: a one-way silicone valve in the lid and a small hand pump let you remove most of that trapped air before storing. Because oxygen drives oxidation and spoilage, storing food with less air around it helps keep it fresher longer — up to 5 times longer than conventional storage.

When is each one enough?
For crackers, cereal, and other dry pantry staples you go through quickly, an ordinary airtight container does the job. Vacuum sealing earns its place when freshness really matters and food would otherwise sit: cut produce, cooked leftovers, batch-cooked meals, cheese, herbs, and meats.
